It wouldn't be Easter in our household without me baking this Lemon Meringue Cake, the recipe comes from Nigella Lawson's Feast Cookbook and has a wonderful section on Easter recipes. I love the light lemony sponge, with the crisp squashy meringue topping and then sandwiched with lemon curd and whipped cream. If you love Lemon Meringue Pie than you will love this cake. I have a friend over for dinner tonight and I will be serving this cake as dessert, alongside my home-made lemon curd ice cream.
I made this at Christmas! (http://happylovestrawberry.blogspot.com/2007/12/something-special.html) It's such a great recipe, isn't it - yours looks stunning!!
Hi Maria, I'm just about to make the lemon meringue cake and knowing that Nigella is not always reliable I was checking the internet if anyone has made it successfuly and I found you.:) I love your profile, a full-time domestic goddess. Your life is very similar to mine and I find that it is difficult to find people that understand our choice of staying at home and spoil our husbands, kids and in my case I also make my own cat food! I too love cooking and don't need to leave the house to work thanks to my partner. No kids, yet except for 3 cats. :) Anyhow I'm pleased to have found your site.Best Wishes, Eva
Hello and Welcome to The Goddess's Kitchen!
My name is Maria and reside in Surrey, UK. I'm a full time domestic goddess (thanks to my hard working hubby), wife and mother (I love my work). I'm also a nannie to my beautiful grandson called Ollie, who I just love to bits! My other babies are my 2 beautiful but spoilt kitties, Madison and Coco. My passion is cooking and baking and my kitchen is my sanctuary. I love being able to share my love and joy of food with my family, friends and fellow foodie bloggers. I confess to having a "slight" amazon addiction and love to browse and buy beautiful cookbooks and own over 200 cookbooks, a collection which grows regularly!
