Banana and Apple Cinnamon Muffins
Ingredients
3 very ripe bananas
125ml vegetable oil
2 eggs
250g plain flour
100g caster sugar
½ teaspoon bicarbonate of soda
1 teaspoon baking powder
½ teaspoon cinnamon
2 eating apples, cored, peeled and cubed
Preheat the oven to 200ºC/180ºC fan oven/gas mark 6 and line a 12-bun muffin tin with muffin papers.
Mash the bananas and set aside for a moment. Pour the oil into a jug and beat in the eggs. Put the flour, sugar, bicarbonate of soda and baking powder and cinnamon into a large bowl and mix in the beaten-egg-and-oil mixture, followed by the mashed bananas. Fold in the chopped apples and then place equal quantities in the prepared muffin tin and bake in the oven for 20 minutes. Cool in the tin for 5 minutes before removing to cool completely on a wire rack.

Yum - I love those flavours together! Excellent planning in leaving out enough equipment to whip up some muffins.

Thanks for a great website. I have spent many evenings lately reading all your lovely recipes and my husband is wondering what's happened, with me baking something different nearly everyday! :) For some reason the way you write makes me confident that the recipes will turn out great! So far have tried, Peanut butter oat bars, Oatmeal and Choc (I used sultanas) cookies, Peanut butter and white choc cookies, Vanilla Cupcakes, Fruit tea loaf, Apple and Cinnamon Cake, Apple Flapjacks and Warm cinnamon-spiced blueberry cake! See, I've become the crazy baker! All this in less than 2 weeks. Our favourite would have to be the wholemeal and sultana cookies.
I will have no clothes that fit soon! Look forward to reading what you cook next. Oh yes, we had your Rigatoni on the weekend as well! Thanks again.

I had a couple of bananas and apples in my fruit bowl calling out to be eaten, so I decided to bake some muffins to take tomorrow to work. I find absolutely annoying having to pay £1.50 for a muffin at work.
Quick search on Google and yours came up. Many thanks for the recipe.
