Banana White Chocolate Muffins
Ingredients
3 very ripe bananas
125ml vegetable oil
2 eggs
250g plain flour
100g caster sugar
½ teaspoon bicarbonate of soda
1 teaspoon baking powder
150g white chocolate (or butterscotch or dark chocolate morsels)
Preheat the oven to 200ºC/gas mark 6 and line a 12-bun muffin tin with muffin papers.
Mash the bananas and set aside for a moment.Pour the oil into a jug and beat in the eggs.
Put the flour, sugar, bicarbonate of soda and baking powder into a large bowl and mix in the beaten-egg-and-oil mixture, followed by the mashed bananas.
Fold in the white chocolate morsels, then place equal quantities in the prepared muffin tin and bake in the oven for 20 minutes.
Those muffine looks moist and delicious.

I really like the sound of these and will ahve to try them next time I have some over ripe bananas.

They look lovely Maria, I know what you mean about baking with bananas all the time. Much better to put them to good use than throw them out, what a waste that would be :)

ReplyDeleteI can remember cooking these from HTBADG a few years ago and a friend of hubby's dropped by, he had a couple warm from the oven, now even years later he still thinks of these when he sees me!
I love muffins and am always looking for new variations - this is one I must try next time I have bananas on the turn!

How did you get such lovely domes on your muffins? Mine always come out flat. They look and sound super delicious! I can't wait to get buy bananas so they can get all spotty and ripe.
ReplyDeleteIn my house bananas never go wasted but I agree with you, with petrol prices going up and everything becoming so expensive it's not a good period to waste things. I try and make good use of our leftovers. Your muffins look delicious.
