Banana and Peanut Butter Muffins

It seems since making the Toffee Apple and Almond Crumble recipe I’ve been unable to put down Rachel Allen’s Favourite Food at Home. There are so many great recipes in this book that I had forgotten about (that’s what happens when you own nearly 200 cookbooks, eek). I’m making it my mission during the month of March to try out recipes I have book-marked, but don’t quote me on that, he he! In our home we adore muffins and they make a great breakfast on the run, especially for teenage boys who deny they have time for brekkie in the morning (tomorrow Jake will have no excuse)! These muffins are deliciously moist, sweet and nutty and bursting with flavour. I couldn’t resist adding some Nestle Swirled Milk Chocolate and Peanut Butter Morsels for that extra scrumptious touch.

Banana and Peanut Butter Muffins

Makes 12 (I ended up with 17)

Ingredients
275g/100oz plain flour
50g/2oz oats
1 tbsp baking powder
2 eggs
150g/5oz light brown sugar
2 bananas (200g/7oz), peeled and mashed
125g/4½ oz crunchy peanut butter
50g/2oz butter, melted
250ml/8fl oz milk
150g/5oz Nestle Swirled Milk Chocolate and Peanut Butter Morsels (optional)

Preheat the oven to 190oC/170oC fan oven/375oF/Gas mark 5. Line a muffin pan with 12 paper muffin cases.

Place the flour, oats and baking powder in a bowl, mix together and set aside. In another bowl, whisk the eggs; add the light brown sugar, mashed bananas, peanut butter and the melted butter. Stir to mix, then add the milk and stir to combine. Add the dry ingredients and fold in gently, do not over-mix.

Spoon the mixture into the prepared muffin cases and bake for 18-24 minutes, or until the tops spring back when gently touched. Allow to stand in the muffin pan for a minute before turning out to cool on a wire rack.

  1. don't you love when you come across a cookbook where every page is filled with great pics and tasty recipes... i sit down some evenings with no intention of baking, but still read cookbooks cover to cover :)

  3. I really enjoy sitting down on the couch at night and thumbing through cookbooks. It's one of my favorite pastimes. :)
    The Banana and Peanut Butter muffins sound yummy. I love the addition of the swirled morsels. :)

    Anyway onto to your "Scrumptious" muffins. They look perfection sweetie and a must try, I have had this recipe also bookmarked but like you say hahahaha all these cookbooks ;0)

    Rosie, I knew you'd be cracking up when reading this..hehehe. We are definitely partners in crime when it comes to cookbooks. Btw pre-ordered The Hummingbird Bakery Cookbook this week. Release date is 12th March, can't wait! You definitely need this one too ;o)

    Beth, sound like your as bad as Rosie and myself when it comes to amazon! I've had the Humingbird Bakery Cookbook in my wishlist for a while but after receiving this month's edition of Delicious and viewing some of the bakes from this book, I was completely sold! Which Tessa Kiros book did you order? I have all of hers, except Venezia. My favourite Tessa book has to be Apples for Jam.

    Ivy, yes I have nearly 200!! What can I say I just love cookbooks and I don't think I'm alone in that...Rosie stop hiding and tell them you have well over 300!!!...hehehe

  12. 200 cookbooks. Good going!

    I have loads of things bookmarked that I want to try but never get around to. I had Monday off this week and had a great time - made some cherry and white chocolate muffins, some mint choc-chip muffins and also made an attempt at your mincemeat wedges.

    I didn't quite seem to end up with the same result! I did however end up with a sort of mincemeat cake which was lovely! I had no idea I could make cakes! What a revelation.

    And for pretty cake stands have you been on dotcomgiftshop.com? There's some fabulous ones there that I'm dying to get for our new flat!
