Chocolate Birthday Cake

Sorry for my lack of blogging lately but hubby and I have been away on holiday for a much needed break and to celebrate both of us turning 40 in August. We had a lovely time away in the Cotswolds, a beautiful part of England, where we rented a log cabin with outdoor hot tub, which we used every evening after a day of exploring. While away we enjoyed lovely pub lunches/dinners all made from wonderful local produce. On the topic of birthdays, I made this amazing chocolate cake for my hubby's birthday. The recipe is from a Passion for Baking and like all the recipes I've tried from this book, this cake did not disappoint. This is the perfect birthday cake and I'll definitely be baking this again!

Chocolate Birthday Cake

Serves 8-10

Ingredients
225g unsalted butter, softened
225g caster sugar
4 large eggs, beaten
1 tsp vanilla extract
200g self-raising flour
1/2 tsp baking powder
1/2 bicarbonate of soda
30g cocoa
2 tbsp full-fat milk
100g good-quality dark chocolate, melted

Ganache:
200g dark chocolate
100 milk chocolate
250ml double cream

Topping:
1 large packet of Maltesers

You will need 2 x 20cm sandwich tins, greased and the bases lined with buttered baking parchment.

Preheat the oven to 180oc/160oc fan oven/350oF/gas mark 4.

In a bowl of a free-standing mixer, cream the butter and sugar together until pale, light and fluffy. Gradually add the beaten eggs and vanilla extract. Add the flour, baking powder, bicarbonate of soda, cocoa and milk, then mix until combined. Add the melted chocolate and mix again until smooth.

Divide equally between the prepared sandwich tins, spread level and bake on the middle shelf of the preheated oven for about 22-25 minutes until golden and a skewer comes away clean when inserted into the middle of the cakes. Turn the cakes out of the tins onto a wire cooling rack and leave until cold.

To make the ganache, finely chop both the dark and milk chocolates and tip into a saucepan along with the double cream. Set the pan over a low heat to melt, stirring constantly until smooth. Pour the ganache into a shallow dish, cool and then chill to firm.

To assemble the cake, place one of the cakes on a cake or serving plate and spoon half of the ganache on the cake and spread. Then scatter with crushed Maltesers.

Cover the top of the second cake layer with ganache, spreading it smoothly with a palette knife. Sandwich the two caes together and finish off with a good scattering of Maltesers.

♥ Happy Birthday Hubby ♥

Today we are celebrating my hubby's 37th birthday! To celebrate the occasion I baked him a 4 layer Vanilla and Chocolate Cake and Chocolate Fudge Cupcakes. Both of which have been thoroughly enjoyed today. It's been a great day of retail therapy, followed by lunch and then ten pin bowling with our son and his girlfriend. We plan to finish the celebrations this evening with a romantic meal for hubby and I at our local Thai restaurant.

Vanilla and Chocolate Layer Cake

Ingredients
For the cake:
340g butter, at room temperature
280g caster sugar
6 eggs, medium
280g self-raising flour
1 tsp vanilla extract
2 tbsp cocoa powder, sifted

For the icing:
520 icing sugar, sifted
220g butter, at room temperature
1 tsp vanilla extract
4 tbsp milk

Preheat the oven to 180oC/fan oven 160oC/Gas mark 4. Grease four 8in cake tins, and line the bottoms with greaseproof or baking paper.

Beat together the butter and sugar until pale and fluffy. Beat in the eggs one at a time. Sift the flour on top and fold in. Separate half the mixture into another bowl and sift in the cocoa powder until well combined. Stir in the vanilla extract to the other mixture. Spoon the cake batter into the prepared tins and spread out evenly, using the back of the spoon. Bake for 20-25 minutes. Turn out the cakes out onto a wire rack to cool completely.

To make the icing, beat together the icing sugar, butter, vanilla and milk until smooth and creamy. Spread each cake layer and then swirl the remaining icing all over the cake.

Vanilla Fudgies to celebrate Ollie's 1st Birthday!!

Today my gorgeous Ollie celebrated his 1st birthday, a day we didn’t think he would see! Many of my followers will know that back in February Ollie was diagnosed with FIP (Feline Infectious Peritonitis), with the diagnosis being bleak for him. Despite the vet not giving him much time, he has defied the odds and is doing well. He does have his bad days where it’s a struggle to eat and those days are hard for me to get through. Ollie having his 1st birthday gives me hope for his future but we take each day as a blessing, he's my little fighter!! I couldn’t go today without marking this special occasion and incorporating my other love…baking! I choose these Vanilla Fudgies as the colouring and their name remind me of Ollie and his distinctive cream colour. Fudge was one of the names in my top five list before we settled on Ollie. The muffins were super easy to make, with the chopping of the fudge being the only time-consuming task. These are light and fluffy, with a lovely vanilla flavour studded with melted nuggets of glorious golden fudge. Eat these while they’re still warm to really enjoy the squidgy, soft fudge chunks at their best but they are equally nice once cooled. Be warned these are very moreish!

Vanilla Fudgies

Makes 12

Ingredients
300g/10oz/2 cups self-raising flour
1 tsp baking powder
115g/4oz/ ½ cup caster sugar
100g/3½oz fudge, cut into pieces (any type of fudge you like – vanilla, chocolate, raisin, clotted)
125ml/4fl oz/ ½ cup milk
100ml/3 ½ fl oz/ scant ½ cup half-fat crème fraiche
1 egg, beaten
1 tsp vanilla extract
60g/2o butter, melted

Preheat the oven to 200oC/180oC fan/400oF/Gas 6. Grease or line a 12-hole muffin pan.

Combine the flour, baking powder and sugar and sift into a large bowl, then scatter the fudge on top.

In a separate bowl or jug, lightly beat the milk, crème fraiche, egg and vanilla until smooth, then stir in the butter. Pour into the dry ingredients and mix together until just combined, then spoon big dollops of the mixture into the prepared muffin pan.

Bake for about 20 minutes until risen and golden. Leave to cool in the pan for a few minutes, then transfer to a wire rack to cool.

Happy Birthday to me!

Today is my birthday and the baker in me couldn't not bake a cake. I made it as pink and girly as possible, cos I deserve it....hehehe. This cake recipe comes from the book Cakes Galore and is a Golden Buttercream Cake but I added pink colouring instead of yellow. The sponge is light, moist and buttery, finished off with lashings of sweet heavenly buttercream. I couldn't resist adding some pastel spots to finish the cake off with an extra girly touch. I am looking forward to a day full of fun, gifts, cake and quality time with hubby and my son!

To all my fellow bloggers I've cut you all each a virtual slice of my birthday cake, enjoy!

Hubby's Birthday ~ Buttercup Golden Layer Cake with Vanilla Buttercream Frosting

Yesterday we celebrated my hubby’s 36th birthday and he was spoilt rotten with lots of cards, gifts, cake and love! I decided to bake him a 3 layer cake (a first for me) from my newly purchased Buttercup Bakes at Home book. It is a foolproof cake and wonderfully easy to bake and nothing smells as fragrant as sweet buttery vanilla sponge baking in the oven. The vanilla buttercream frosting is pure heaven and the recipe they use at Magnolia’s famous Manhattan’s bake shop. I finished it off with a sprinkling of chocolate sprinkles to add some extra birthday fun!

Hubby loved his cake as you can see from the pic above ;o)
