Apple Flapjacks
Ingredients
250g (8oz) butter
250g (8oz) caster sugar
175g (6oz) golden syrup
425g (14oz) porridge oats
2 apples, peeled and chopped
Preheat oven to Gas 4, 180°C, 350°F. Grease and line base a 20x30cm (8x12in) cake tin with baking parchment.
Melt butter, caster sugar and golden syrup together in a pan, stirring until sugar has dissolved. Remove from heat and stir in oats and apples.
Spread mixture in tin and bake for 20-25 minutes. Cut into 12-14 bars; allow to cool before turning out of the tin.

I never would have thought of fresh apples in flapjack (I've used dried though), but they look gorgeous.

These look great Maria - the idea of toffee apple flapjacks is fabulous - I wonder if adding a few chewy toffees to the mix would work?

I added a tbsp of cinnamon to the chopped apples and a tsp to the oats. I also sliced a whole spare apple very, very thinly sprinkled with cinnamon and grilled on the foreman for 15 mins and layed on top of the mix before chucking in the oven. Mmmmmm...

These are great! So economical to make and keep well too. I like adding cinnamon and some ground almonds to the mix.

These apple flapjacks are simply gorgeous. Very quick and easy to make. We all love them. I love the texture of them and the moistness. We are supposed to be on a healthy eating regime but this has sent us a bit off course.
