Ingredients
100g cocoa
250g butter
500g golden caster sugar (I used light brown sugar)
4 eggs, beaten
100g self-raising flour
100g dessicated coconut
icing sugar, to dust (optional)
Heat the oven to 180oC/fan 160oC/gas 4. Line the base of a 21cm square tin with baking parchment. Put the cocoa, butter and sugar in your largest saucepan and gently melt, stirring so the mixture doesn't catch. When the cocoa mixture is metled and combined, cool slightly, then stir in the eggs, little by little, followed by the flour and cocoa.
Tip into the tin and bake for 45 mins on a middle shelf - check after 30 mins and cover with another piece of baking parchment if the crust is browning too much. Cool in the tin, then carefully lift out and cut into squares. Dust with icing sugar.

They look great and certainly wouldn't last for long in my house! Nigella's Snow Flecked Brownies are my faves too but your recomendation may help push me to try this recipe too hehehe

I copied this down right away! I will make them as soon as I replenish my stock of cocoa. I finished it making cookies yesterday. These look so good, I just can't wait! It is just as well I am breastfeeding and using more calories than usual or I would be the size of a house!

I love the addition of coconut! My favorite brownies are also by Nigella: her flourless brownies made with almond meal are to die for.

I made them and gave some to my mum for Mother's Day. This has to be my favourite brownie recipe so far - perfect consistency and really chocolatey (I used hald white sugar and half dark brown sugar) xxx
I made these to take into work today - they were completely dellicious and loved by all who tried them... next time I will do in a larger tin though - a 20cm tin made very deep brownies...
