Serves: Makes 18 muffins
Ingredients
200g Blackberries
3 Apples
240ml Milk
120ml Vegetable Oil
200g Caster Sugar
375g Plain Flour (sifted)
1 teaspoon Salt
1 teaspoon Ground Cinnamon
Topping
50g Demerara sugar
Preheat the oven to 200°C (gas mark 6, 400°F). Place the eggs, oil, sugar and milk in a large mixing bowl and beat together.
Sift flour, salt, baking powder and cinnamon, and add to wet mixture, stir in thoroughly. Peel and core the apples, then cut them into small pieces. Gently stir the apples and blackberries into the mixture. Fill a muffin tray with paper muffin cases, and then fill each case to about two thirds full with the muffin mixture.
Sprinkle sugar over the tops of the muffins. Bake the muffins for 20-25 minutes.

I know what you mean about the season coming early -I couldn't believe it when I started seeing blackberries appearing. A lovely recipe - will be trying this one when I go blackberry picking at the weekend

I love blackberries and apples together so these are a winner. BTW, muffins win over here as you don't dirty a knife to get a portion!!

I've just baked up your recipe for blackberry apple muffins. I will honestly say that I grimaced when the recipe asked for weights of ingredients instead of volume (ie grams vs cups etc.) Luckily I had an old scale in pounds so I could covert fairly easily, but what a way to slow down baking progress. At least for me. Anyway, the muffins turned out pretty small. I think I would have removed half a teaspoon of salt and added a teaspoon of baking soda to help it all rise up. Another 1/2 teaspoon of cinnamon would really bring up the flavor. Otherwise the combination of the blackberry and apple was deeelish. Thanks for the recipe. happy baking!

Picked some blackberries last week and wasn't sure what to do with them - was delighted to come across this site and find this amazing recipe. Absolutely gorgeous! Have made different varieties since - peach and raspberry and apple and sultana. Only bad thing is - my boyfriend keeps eating them all!

These muffins are just gorgeous! I baked these last week after picking lots of scrummy blackberries.
We are going out for tea this evening and we always bring cakes so I am making these as I know they will be a real winner.

Hi, this recipe looks great, I've lots of blackberries to trying to find good ways to use them us, can I use the cooking apples in my garden or does it need to be eaters?
You can try using your cooking apples but I think eaters would be better.
