Lemon Meringue Cake

It wouldn't be Easter in our household without me baking this Lemon Meringue Cake, the recipe comes from Nigella Lawson's Feast Cookbook and has a wonderful section on Easter recipes. I love the light lemony sponge, with the crisp squashy meringue topping and then sandwiched with lemon curd and whipped cream. If you love Lemon Meringue Pie than you will love this cake. I have a friend over for dinner tonight and I will be serving this cake as dessert, alongside my home-made lemon curd ice cream.

I'm just about to make the lemon meringue cake and knowing that Nigella is not always reliable I was checking the internet if anyone has made it successfuly and I found you.:) I love your profile, a full-time domestic goddess. Your life is very similar to mine and I find that it is difficult to find people that understand our choice of staying at home and spoil our husbands, kids and in my case I also make my own cat food! I too love cooking and don't need to leave the house to work thanks to my partner. No kids, yet except for 3 cats. :) Anyhow I'm pleased to have found your site.Best Wishes, Eva
